How to make pesto sauce recipe in an old-fashioned, home-made style so it tastes fresh and delicious?

The ancient method of preparing basil pesto recipe often uses a marble mortar or a wooden pestle. It is considered one of the best ways to prepare pesto at home. The movement of the wrist is very important. It should be a round movement, allowing you to squeeze the leaves and then crush them.

However, people nowadays, often used a blender, something I don’t recommend. I say this because blending ingredients make them into a moist paste where you can’t really see the different ingredients. I have also heard people chopping the ingredients with a mezzuluna or a large half-moon pizza cutter, which can also work well.

The key to your question on how to make pesto sauce recipe so it tastes fresh is not to mix / grind ingredients together all at once, but to do it in steps. For example, you chop the basil and garlic a bit, add more ingredients like basil, then chop it, add some more basil, chop it, add another ingredient, chop, etc. You do this because if you do everything at once, you get a homogenous texture.

Pesto Sauce Recipe ingredients

1 large bunch of basil, leaves only, washed and dried
3 medium cloves of garlic
one small handful of raw pine nuts
roughly 3/4 cup Parmesan, loosely packed and freshly grated
A few tablespoons of extra-virgin olive oil

Equipment: large mezzuluna for chopping or mortar and pestle for grinding

Pesto Sauce Recipe instructions

1. Chop the garlic and 1/3 of the basil leaves with mezzuluna or grind them in mortar and pestle (make sure you’re making a round movement).

2. Once this is chopped / grinded add more basil, chop / grind some more, add the rest of the basil, chop / grind some more. By now, the basil and garlic should be a very fine.

3. Add about half the pine nuts, chop / grind. Add the rest of the pine nuts, chop / grind.

4. Add half of the Parmesan, chop / grind. Add the rest of the Parmesan, and chop / grind.

5. In the end you want everything so fine that you can press all the ingredients into a basil "cake".

6. Transfer the pesto "cake" to a small bowl (not much bigger than the cake).

7. Cover with a bit of olive oil, just a few tablespoons.

Makes about 1 cup.

Please note that there is no additional salt added other than that was in the cheese. This is so you can store it in its fresh state. However, you must make sure that when you’re using it with other recipes you add the salt and appropriate seasonings.

Freezing pesto
