An everyday Indian flat bread -
Roti

Once you start cooking this delicious but simple Indian bread recipe at home, it is easy to become addicted to it!

They are a healthy and easy alternative for those with a yeast allergy.

Rotis are made from small balls of dough that are rolled out and cooked on a hot griddle. The heat makes the roti puff up into a ball. They are lightly coated with ghee (clarified butter or oil) to keep them pliable until serving time.

Ingredients:

3 cup wholemeal plain flour
1 teaspoon salt
3 teaspoon oil
1 cup lukewarm water (use more as needed)

Instructions:

1. Sift 3 cups of plain flour and 1 teaspoon salt into a large bowl. Return the husks. Mix in the oil with fingers until mixture becomes like breadcrumbs. Make a well and pour in cup of warm water.

2. Add more water if the dough is too hard. Keep kneading the dough well to make medium soft dough. The dough should be soft but not stick to your fingers.

3. Place in a lightly oiled bowl, cover with a damp cloth and leave for one hour. Knead again for 5 minutes or until smooth. Roll tablespoons of dough into smooth balls.

4. Take a ball and press it in dry flour on both sides. Roll the ball into 6-inch diameter circle. If the dough is sticky, put some dry flour on it.

5. Heat a skillet (or tawa) on medium high heat. Heat a little oil in the skillet. To check if the skillet is ready, put some water drops on it. If the water sizzles, the skillet is ready.

6. Put the flat roti on the skillet. The roti will puff in different sides and the color will turn browner. Flip again after a few seconds. Take a flat spoon (or spatula) and press gently on the puffed parts of the roti. The roti should puff more now. Keep flipping the roti until it has light golden-brown spots on either site. You can take out the roti and butter the heated side of the roti.

7. To keep the chapattis warm, put them in a container lined with paper towel or a cloth. Fold over sides of the towel and cover the container. This will ensure the rotis stay soft before serving.
