Basic Sausage Rolls

This quick and easy appetizers are delicious, easy party appetizers that your guests will absolutely love. My mother used to make these at parties when we were kids and they were always a big hit at the party. So try these basic sausage rolls at your next party and your guests, no doubt, will enjoy them.

It is a basic recipe as long as you have puff pastry, minced meat, and some fresh herbs like parsley and thyme at home. If not, then a visit to a grocery store will be needed. There are other ingredients too, which you should already have in your pantry.

When I say quick, I mean that if you have the puff pastry and defrosted minced meat, then it will take about half an hour to prepare them. By the way, you can also make puff pastry at home to cook these basic sausage rolls, but they are too advanced for me. That is why I just prefer to purchase the pastry from the store.

Ingredients

3 sheets ready-rolled puff pastry
2 eggs, lightly beaten
750g (1 ½ lb) sausage mince
1 onion, finely chopped
1 clove garlic, crushed
1 cup (80g) fresh breadcrumbs
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh thyme
½ teaspoon each ground sage, nutmeg, black pepper and cloves

Instructions

1. Preheat the oven to 200 C (400 F).

2. Cut the pastry sheets in half and lightly brush the edges with some of the beaten egg.

3. Mix half the remaining egg with the remaining ingredients in a large bowl, then divide into six even portions.

4. Pipe or spoon the filling down the centre of each piece of pastry, then brush the edges with some of the egg. Fold the pastry over the filling, overlapping the edges and placing the join underneath.

5. Brush the rolls with more egg, then cut each into 6 short pieces.

6. Cut two small slashes on top of each roll and place on lightly greased baking trays and bake for 15 minutes, then reduce the oven temperature to moderate 180 C (350 F) and bake for another 15 minutes or until puffed and golden.

For a different flavour for these quick and easy appetizers, select a filling from the recipes below and use the same methods as above for the basic sausage roll.

SPICY LAMB
Mix 750g (1 ½ lb) lamb mince, 1 cup (90 g) fresh breadcrumbs, 1 small grated onion, 1 tablespoon soy sauce, 2 teaspoons each of grated fresh ginger and soft brown sugar, 1 teaspoon ground coriander, ½ teaspoon each of ground cumin and sambal oelek. Lightly sprinkle the pastry rolls with poppy seeds after glazing and before baking.

SAUCY BEEF
Cook 1 finely chopped onion and 1-2 crushed cloves garlic in 20 g ( 2/3 oz) butter until the onion is softened. Mix 750 g (1 ½ lb) lean beef mince, the sautéed onion and garlic, 3 tablespoons finely chopped fresh parsley, 3 tablespoons plain flour, 3 tablespoons tomato sauce, 1 tablespoon each of Worcestershire and soy sauces and 2 teaspoons ground allspice until well-combined.

CHUTNEY CHICKEN
Mix 750 g (1 ½ lb) chicken mince, 4 finely chopped spring onions, 1 cup fresh breadcrumbs, 1 finely grated carrot, 2 tablespoons fruit chutney and 1 tablespoon each of sweet chilli sauce and grated ginger. Sprinkle the pastry with sesame seeds after glazing, before baking.
