Dips for Parties

Well, it certainly does not get simpler than these quick easy appetizers that you can prepare before a party. These can serve well with pita, other kinds of breads, chips, vegetables, amongst a host of other items.

Creamy Salmon
Combine 200g (6 ½ oz) cream cheese with 100 g (3 ½ oz) chopped smoked salmon and 5 tablespoons cream in a food processor and mix until smooth. Season with pepper and sprinkle with a few chopped chives. Keep refrigerated until ready to use. Makes about 1 ½ cups

Hot Apple Chutney
Beat ¼ cup (60 g / 2 oz) sour cream, ½ cup (125g / 4 oz) ready-made hot apple chutney and 1 teaspoon maple syrup together until smooth. Season, to taste, with salt and pepper and refrigerate until ready to serve. Makes about 1 ½ cups.

Blue Cheese and Cream
Mix 250g (8 oz) blue cheese in a food processor with ½ cup (125 ml / 4 fl oz) cream and 2 teaspoons apple cider vinegar and mix well. Season with salt and pepper, cover and refrigerate until ready to use. Makes about 1 ½ cups.

Sweet and Sour
Beat 1 cup (250 g/ 4 oz) natural yoghurt and 1/3 cup (80ml) bottled sweet and sour sauce together until smooth. Add 1 tablespoon finely chopped fresh chives and season, to taste, with salt and pepper. Cover and keep refrigerated until ready to use. Makes about 1 ½ cups.

Cucumber and Pear
Beat 2 tablespoons whole egg mayonnaise, 2 tablespoons natural yoghurt, 1 tablespoon sour cream and 1 teaspoon Dijon mustard together until well combined and smooth. Finely dice half a pear and ¼ of a small cucumber and stir into the mixture with 1 teaspoon of lemon juice. Season, to taste, with salt and freshly ground black pepper. Cover and keep refrigerated until ready to use. Makes about 1 cup.

Refried beans
Combine a 460g (14 oz) can refried beans and ¼ cup (60g / 2oz) sour cream in a food processor and mix well until smooth, adding salt and pepper, to taste. Cover and keep at room temperature until ready to use. Makes about 1 ½ cups.

Avocado and Herb
Place 1 avocado, 1 tablespoon each of sour cream, lemon juice and light olive oil, 1 small seeded tomato and ¾ cup (25 g / ¾ oz) coriander leaves in a food processor and mix until smooth. Season with salt and pepper. Transfer to a glass bowl, lay plastic wrap directly onto the surface of the dip to (to prevent a skin forming) and keep refrigerated until ready to use. Try to make this dip close to serving time, so it does not discolour. Makes about 2 cups.
